Instructions

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Heat olive oil in an oven-safe skillet over medium heat.
  3. Add diced potatoes to the skillet and cook until lightly browned, about 5 minutes.
  4. In a bowl, whisk together eggs, milk, salt, and pepper.
  5. Sprinkle crumbled bacon and shredded cheese over the potatoes in the skillet.
  6. Pour the egg mixture evenly over the potatoes, bacon, and cheese.
