Simple recipe for rich gingerbread cheesecake bars.

- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 cup unsalted butter, softened
- 1/2 cup packed brown sugar
- 1/2 cup molasses
- 1 large egg
- 8 ounces cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch baking pan.
- In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, and cloves. Set aside.
- In a large bowl, beat the softened butter, brown sugar, and molasses until creamy. Beat in the egg. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Press two-thirds of the gingerbread mixture evenly into the bottom of the prepared pan.
- In a separate bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth. Spread this mixture over the gingerbread base.
- Crumble the remaining one-third of the gingerbread mixture over the cream cheese layer.
- Bake for 30 to 35 minutes, or until the edges are set and the center is mostly firm.
- Let the bars cool completely on a wire rack before cutting into squares.
Notes
- For cleaner cuts, chill the cooled bars for at least one hour before slicing.
- You can dust the top with powdered sugar before serving for presentation.
