Simple puff pastry appetizers filled with creamy goat cheese and herbs.
Ingredients

- 1 sheet frozen puff pastry, thawed
- 4 ounces soft goat cheese
- 1 tablespoon fresh thyme leaves
- 1 large egg, beaten (for egg wash)
- Pinch of salt
- Pinch of black pepper
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
- Unfold the thawed puff pastry sheet on a lightly floured surface. Cut the pastry into 12 equal squares.
- In a small bowl, combine the goat cheese, thyme, salt, and pepper. Mix until just combined.
- Place about one teaspoon of the goat cheese mixture onto the center of each pastry square.
- Fold each square into a triangle or a small rectangle, pressing the edges firmly to seal. You can crimp the edges with a fork for a better seal.
- Place the sealed pastries on the prepared baking sheet.
- Brush the tops of the pastries lightly with the beaten egg wash.
- Bake for 12 to 15 minutes, or until the pastry is puffed and golden brown.
- Remove from the oven and let cool slightly before serving.
Notes
- You can substitute rosemary for thyme if you prefer a different flavor.
- For extra richness, sprinkle a few sesame seeds on top before baking.
