A simple recipe for a sweet, syrup-soaked Greek honey pie.

- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/2 cup honey
- 1/4 cup water
- 1 cinnamon stick
- 1 strip orange zest
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
- Whisk together the flour, baking powder, and salt in a bowl. Set aside.
- In a separate bowl, cream the softened butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the flour mixture alternately with the milk, mixing until just combined. Do not overmix.
- Pour the batter into the prepared pan.
- Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
- While the pie bakes, prepare the syrup: Combine the honey, water, cinnamon stick, and orange zest in a small saucepan. Bring to a simmer over medium heat, stirring until the honey dissolves. Remove from heat and let it steep for 10 minutes. Remove the cinnamon stick and zest.
- As soon as the pie comes out of the oven, slowly pour the warm syrup evenly over the hot pie. The pie will absorb the syrup.
- Let the pie cool completely in the pan before slicing and serving.
Notes
- For a richer flavor, use thyme honey if available.
- You can garnish the cooled pie with a light dusting of powdered sugar or chopped walnuts.
