Description

A simple recipe for a sweet potato casserole with a crunchy topping.

Ingredients

Scale
  • 2 cups cooked and mashed sweet potatoes
  • 1/2 cup granulated sugar
  • 1/4 cup milk
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 cup chopped pecans

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Grease an 8×8 inch baking dish.
  2. In a large bowl, combine the mashed sweet potatoes, granulated sugar, milk, eggs, vanilla extract, and salt. Mix until smooth.
  3. Pour the sweet potato mixture into the prepared baking dish.
  4. In a separate small bowl, combine the brown sugar, flour, melted butter, and pecans. Mix until crumbly.
  5. Sprinkle the topping evenly over the sweet potato mixture.
  6. Bake for 30 to 35 minutes, or until the topping is golden brown and the casserole is set.
  7. Let the casserole cool for 10 minutes before serving.

Notes

  • You can use canned sweet potatoes if you drain them well before mashing.
  • For a smoother topping, pulse the pecans briefly in a food processor.
