- 2 cups cooked and mashed sweet potatoes
- 1/2 cup granulated sugar
- 1/4 cup milk
- 2 large eggs, lightly beaten
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/4 cup unsalted butter, melted
- 1/2 cup chopped pecans
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Grease an 8×8 inch baking dish.
- In a large bowl, combine the mashed sweet potatoes, granulated sugar, milk, eggs, vanilla extract, and salt. Mix until smooth.
- Pour the sweet potato mixture into the prepared baking dish.
- In a separate small bowl, combine the brown sugar, flour, melted butter, and pecans. Mix until crumbly.
- Sprinkle the topping evenly over the sweet potato mixture.
- Bake for 30 to 35 minutes, or until the topping is golden brown and the casserole is set.
- Let the casserole cool for 10 minutes before serving.
Notes
- You can use canned sweet potatoes if you drain them well before mashing.
- For a smoother topping, pulse the pecans briefly in a food processor.
