A simple recipe for a flavorful Greek marinade perfect for grilling chicken.
Ingredients

- 1/2 cup olive oil
- 1/4 cup fresh lemon juice
- 2 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground cumin
Instructions
- In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, pepper, and cumin.
- Place your chicken pieces in a resealable plastic bag or a shallow dish.
- Pour the marinade over the chicken, making sure all pieces are coated.
- Seal the bag or cover the dish.
- Refrigerate for at least 30 minutes, or up to 4 hours for best flavor.
- Remove chicken from the marinade and discard the remaining liquid before grilling.
Notes
- For best results, use bone-in, skin-on chicken pieces.
- You can substitute dried rosemary for thyme if you prefer.
