A simple recipe for a flavorful Greek marinade perfect for grilling chicken.


Ingredients

  • 1/2 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground cumin

Instructions

  1. In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, pepper, and cumin.
  2. Place your chicken pieces in a resealable plastic bag or a shallow dish.
  3. Pour the marinade over the chicken, making sure all pieces are coated.
  4. Seal the bag or cover the dish.
  5. Refrigerate for at least 30 minutes, or up to 4 hours for best flavor.
  6. Remove chicken from the marinade and discard the remaining liquid before grilling.

Notes

  • For best results, use bone-in, skin-on chicken pieces.
  • You can substitute dried rosemary for thyme if you prefer.
