Simple recipe for roast potatoes flavored with feta cheese and lemon.

- 2 lbs potatoes, cut into 1-inch pieces
- 1/2 cup olive oil
- 1/4 cup fresh lemon juice
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 oz feta cheese, crumbled
Instructions
- Preheat your oven to 400°F (200°C).
- Place the cut potatoes in a large bowl.
- In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
- Pour the oil mixture over the potatoes and toss until evenly coated.
- Spread the potatoes in a single layer on a large baking sheet.
- Roast for 30 minutes.
- Remove the baking sheet from the oven and sprinkle the crumbled feta cheese over the potatoes.
- Return to the oven and roast for another 10 to 15 minutes, or until the potatoes are tender and golden brown and the feta is slightly softened.
- Serve immediately.
Notes
- Use waxy potatoes like Yukon Gold for the best texture.
- You can add a few cloves of garlic to the oil mixture for extra flavor.
