- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon dried thyme
- 1 pound potatoes, peeled and diced
- 1 cup beef broth
- 1 tablespoon olive oil
- 1/4 cup chopped fresh parsley, for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground beef and cook, breaking it up with a spoon, until browned. Drain excess fat.
- Add chopped onion to the skillet and cook until softened, about 5 minutes.
- Stir in minced garlic, salt, pepper, paprika, and thyme. Cook for 1 minute more until fragrant.
- Add diced potatoes and beef broth to the skillet.
- Bring to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until potatoes are tender and liquid has mostly evaporated.
- Stir occasionally to prevent sticking.
- Garnish with fresh parsley before serving.
Notes
- For a creamier texture, you can add a splash of milk or cream in the last 5 minutes of cooking.
