Description

A simple, hearty casserole combining ground beef, cheese, and Jiffy cornbread mix.


Ingredients

  • 1 pound ground beef
  • 1 can (15 ounces) corn, drained
  • 1 can (14.75 ounces) creamed corn
  • 1 cup shredded cheddar cheese
  • 1 box (8.5 ounces) Jiffy Corn Muffin Mix
  • 1 egg
  • 1/3 cup milk

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a 9×9 inch baking dish.
  2. Brown the ground beef in a skillet over medium heat. Drain off any excess grease.
  3. In a large bowl, combine the browned ground beef, drained corn, creamed corn, and half of the shredded cheese. Spread this mixture evenly into the prepared baking dish.
  4. In a separate bowl, prepare the cornbread batter according to the Jiffy mix package directions, usually mixing the dry mix with the egg and milk.
  5. Pour the cornbread batter evenly over the beef mixture in the baking dish.
  6. Sprinkle the remaining half of the shredded cheese over the top of the batter.
  7. Bake for 25 to 30 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
  8. Let the casserole cool for 5 minutes before cutting and serving.

Notes

  • You can add 1/2 cup of diced onion with the ground beef for extra flavor.
  • For a spicier version, mix 1/4 cup of mild salsa into the beef mixture.
