Description
A simple, hearty casserole combining ground beef, cheese, and Jiffy cornbread mix.

- 1 pound ground beef
- 1 can (15 ounces) corn, drained
- 1 can (14.75 ounces) creamed corn
- 1 cup shredded cheddar cheese
- 1 box (8.5 ounces) Jiffy Corn Muffin Mix
- 1 egg
- 1/3 cup milk
Instructions
- Preheat your oven to 400 degrees Fahrenheit. Lightly grease a 9×9 inch baking dish.
- Brown the ground beef in a skillet over medium heat. Drain off any excess grease.
- In a large bowl, combine the browned ground beef, drained corn, creamed corn, and half of the shredded cheese. Spread this mixture evenly into the prepared baking dish.
- In a separate bowl, prepare the cornbread batter according to the Jiffy mix package directions, usually mixing the dry mix with the egg and milk.
- Pour the cornbread batter evenly over the beef mixture in the baking dish.
- Sprinkle the remaining half of the shredded cheese over the top of the batter.
- Bake for 25 to 30 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
- Let the casserole cool for 5 minutes before cutting and serving.
Notes
- You can add 1/2 cup of diced onion with the ground beef for extra flavor.
- For a spicier version, mix 1/4 cup of mild salsa into the beef mixture.
