- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/4 teaspoon dried rosemary
- 2 cups cooked sweet potato, mashed
- 1/2 cup chicken broth
- 1/4 cup chopped fresh parsley
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Add chopped onion to the skillet and cook until softened, about 5 minutes.
- Stir in minced garlic, salt, pepper, thyme, and rosemary. Cook for 1 minute more until fragrant.
- In a large bowl, combine the mashed sweet potato and chicken broth. Stir until smooth.
- Add the cooked turkey mixture and chopped parsley to the sweet potato mixture. Stir to combine.
- Transfer the mixture to a greased 8×8 inch baking dish.
- Bake for 20-25 minutes, or until heated through and bubbly.
- Let stand for 5 minutes before serving.
Notes
- For a creamier texture, you can add a splash of milk or cream to the sweet potato mixture.
- Top with shredded cheese during the last 5 minutes of baking for a cheesy crust.
- This casserole can be made ahead of time and reheated.
