  • 1 package (14.1 ounces) refrigerated pie crusts
  • 1 cup pumpkin puree
  • 1/4 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1 large egg, beaten
  • 1 tablespoon milk
  • Orange and black food coloring (optional)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Line baking sheets with parchment paper.
  2. In a medium bowl, mix the pumpkin puree, brown sugar, cinnamon, ginger, and nutmeg. This is your filling.
  3. Unroll the pie crusts onto a lightly floured surface. Use a round cookie cutter (about 3 inches in diameter) to cut out circles from the dough. You should get about 16-20 circles per package.
  4. Place about one teaspoon of the pumpkin filling onto the center of one dough circle.
  5. Brush the edges of the dough circle lightly with water or the beaten egg wash.
  6. Place a second dough circle on top of the filling. Press the edges together firmly to seal. Crimp the edges with a fork to make a decorative seal.
  7. If desired, use a small knife to cut a small vent shape (like a tiny ghost or bat) on top of each pie bite.
  8. Mix the remaining beaten egg with the milk to create an egg wash. Brush the tops of the hand pies with the wash.
  9. Bake for 12 to 15 minutes, or until the crust is golden brown.
  10. Let the hand pies cool on a wire rack before serving.

Notes

  • For a festive look, add a drop of orange or black food coloring to the egg wash before brushing the tops.
  • You can substitute apple butter for the pumpkin filling for a different flavor.
  • These freeze well after baking; cool completely, then place in a freezer-safe bag. Reheat in a toaster oven.
