Ingredients

  • 2 lbs small potatoes, halved
  • 1 block (7 oz) feta cheese, cubed
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 cloves garlic, minced

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Place the halved potatoes in a large bowl.
  3. Drizzle the potatoes with olive oil.
  4. Add oregano, thyme, pepper, salt, and minced garlic to the potatoes. Toss well to coat everything evenly.
  5. Spread the seasoned potatoes in a single layer on a baking sheet.
  6. Bake for 25 minutes.
  7. Remove the baking sheet from the oven. Scatter the cubed feta cheese over the potatoes.
  8. Return the baking sheet to the oven and bake for another 10 to 15 minutes, or until the potatoes are tender and the feta is slightly softened and lightly golden.
  9. Serve immediately.

  • You can use different herbs like rosemary if you prefer.
  • For crispier potatoes, ensure they are in a single layer on the baking sheet.
