A simple recipe for baked potatoes with feta cheese, seasoned with herbs.

- 2 lbs small potatoes, halved
- 1 block (7 oz) feta cheese, cubed
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 2 cloves garlic, minced
Instructions
- Preheat your oven to 400 degrees F (200 degrees C).
- Place the halved potatoes in a large bowl.
- Drizzle the potatoes with olive oil.
- Add oregano, thyme, pepper, salt, and minced garlic to the potatoes. Toss well to coat everything evenly.
- Spread the seasoned potatoes in a single layer on a baking sheet.
- Bake for 25 minutes.
- Remove the baking sheet from the oven. Scatter the cubed feta cheese over the potatoes.
- Return the baking sheet to the oven and bake for another 10 to 15 minutes, or until the potatoes are tender and the feta is slightly softened and lightly golden.
- Serve immediately.
Notes
- You can use different herbs like rosemary if you prefer.
- For crispier potatoes, ensure they are in a single layer on the baking sheet.
