A recipe for a rich and creamy coconut cream pie.

- 1 pre-made 9-inch pie crust
- 1 1/2 cups granulated sugar
- 1/3 cup cornstarch
- 1/4 teaspoon salt
- 3 cups whole milk
- 4 large egg yolks, lightly beaten
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1 1/2 cups sweetened flaked coconut, divided
- 2 cups heavy cream
- 1/4 cup powdered sugar
Instructions
- In a medium saucepan, whisk together the granulated sugar, cornstarch, and salt.
- Gradually whisk in the whole milk until smooth.
- Cook over medium heat, stirring constantly, until the mixture thickens and boils. Boil for 1 minute, stirring constantly. Remove from heat.
- In a small bowl, temper the egg yolks by slowly whisking about 1 cup of the hot milk mixture into the yolks.
- Pour the tempered yolk mixture back into the saucepan with the remaining hot milk mixture.
- Cook over medium heat, stirring constantly, until the mixture thickens again and comes to a boil. Boil for 1 minute, stirring constantly. Remove from heat.
- Stir in the butter, vanilla extract, and 1 cup of the flaked coconut.
- Pour the coconut filling into the pre-made pie crust. Press plastic wrap directly onto the surface of the filling to prevent a skin from forming. Chill for at least 3 hours, or until completely cold.
- In a separate bowl, beat the heavy cream and powdered sugar with an electric mixer until stiff peaks form.
- Spread the whipped cream evenly over the chilled pie filling.
- Sprinkle the remaining 1/2 cup of flaked coconut over the whipped cream.
- Chill for at least 1 hour before slicing and serving.
Notes
- You can toast the reserved 1/2 cup of coconut in a dry skillet over medium heat until golden brown for topping, if desired.
- For a homemade crust, bake it according to your preferred recipe before filling.
