  • 4 large eggs
  • 1 tablespoon vegetable oil
  • 1 cup ranchero sauce (canned or homemade)
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons chopped fresh cilantro
  • Salt and black pepper to taste

Instructions

  1. Heat the vegetable oil in a skillet over medium heat.
  2. Lightly fry each corn tortilla for about 30 seconds per side until slightly softened but not crispy. Set aside.
  3. In the same skillet, fry the eggs to your desired doneness (sunny-side up recommended). Season lightly with salt and pepper.
