Description
A quick skillet meal featuring chicken, cream cheese, bacon, and jalapenos.
Ingredients

- 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 4 ounces cream cheese, cubed
- 1/2 cup shredded cheddar cheese
- 1/4 cup cooked, crumbled bacon
- 2 jalapenos, seeded and minced (use more or less to taste)
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Season chicken pieces with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken and set aside.
- Add onion to the skillet and cook until softened, about 3 minutes. Add garlic and cook for 1 minute more until fragrant.
- Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer.
- Reduce heat to low. Stir in cream cheese until melted and the sauce is smooth.
- Return the chicken to the skillet. Stir in bacon and minced jalapenos.
- Sprinkle cheddar cheese over the top. Cover the skillet and cook for 2-3 minutes until the cheese is melted.
- Remove from heat. Garnish with fresh parsley before serving.
Notes
- For less heat, remove all seeds and membranes from the jalapenos.
- You can substitute Monterey Jack cheese for cheddar if you prefer a milder flavor.
