Jalapeno Popper Chicken Skillet

Description

A quick skillet meal featuring chicken, cream cheese, bacon, and jalapenos.


Ingredients

  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 4 ounces cream cheese, cubed
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked, crumbled bacon
  • 2 jalapenos, seeded and minced (use more or less to taste)
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken and set aside.
  3. Add onion to the skillet and cook until softened, about 3 minutes. Add garlic and cook for 1 minute more until fragrant.
  4. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer.
  5. Reduce heat to low. Stir in cream cheese until melted and the sauce is smooth.
  6. Return the chicken to the skillet. Stir in bacon and minced jalapenos.
  7. Sprinkle cheddar cheese over the top. Cover the skillet and cook for 2-3 minutes until the cheese is melted.
  8. Remove from heat. Garnish with fresh parsley before serving.

Notes

  • For less heat, remove all seeds and membranes from the jalapenos.
  • You can substitute Monterey Jack cheese for cheddar if you prefer a milder flavor.
