A simple recipe for a tart and sweet key lime pie.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 1 (14 ounce) can sweetened condensed milk
- 1/2 cup fresh key lime juice (about 10–12 limes)
- 2 large egg yolks
- 1 teaspoon lime zest
- Whipped cream for topping (optional)
Instructions
- Preheat your oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix the graham cracker crumbs and 1/4 cup sugar. Pour in the melted butter and mix until the crumbs are evenly moistened.
- Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie plate.
- Bake the crust for 10 minutes. Remove from the oven and let it cool slightly.
- In a separate bowl, whisk together the sweetened condensed milk, key lime juice, egg yolks, and lime zest until smooth.
- Pour the filling into the cooled crust.
- Bake for 15 minutes, or until the edges are set but the center still jiggles slightly.
- Cool the pie completely on a wire rack.
- Chill the pie in the refrigerator for at least 4 hours, or until firm.
- Top with whipped cream before serving, if desired.
Notes
- Use fresh key lime juice for the best flavor. Bottled juice changes the taste.
- Do not overbake the pie; a slight jiggle in the center is correct.
- You can use regular limes if key limes are unavailable, but the flavor will be less intense.
