Ingredients

- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 cup milk
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- Vegetable oil for frying
- 1/2 cup powdered sugar for dusting
Instructions
- Whisk together flour, baking powder, salt, and granulated sugar in a medium bowl.
- In a separate bowl, whisk the egg, milk, lemon zest, and lemon juice.
- Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix. A few lumps are acceptable.
- Heat about 2 inches of vegetable oil in a deep skillet to 350 degrees F (175 degrees C).
- Carefully drop spoonfuls of batter into the hot oil, frying about 3 to 4 at a time.
- Fry for 2 to 3 minutes per side, until golden brown and cooked through.
- Remove fritters with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
- Dust generously with powdered sugar before serving warm.
Notes
- For extra lemon flavor, you can add a teaspoon of vanilla extract to the wet ingredients.
