Description

A hearty and flavorful casserole with ground beef, sweet corn, cheddar cheese, and a creamy ranch sauce.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 can (15 ounces) sweet corn, drained
  • 1 can (10 ounces) Rotel diced tomatoes with green chilies, undrained
  • 1 package (1 ounce) dry ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brown the ground beef and chopped onion in a large skillet over medium-high heat. Drain off any excess grease.
  3. Stir in the drained sweet corn, undrained Rotel, ranch seasoning mix, shredded cheddar cheese, sour cream, and milk.
  4. Season with salt and pepper to your preference.
  5. Pour the mixture into a greased 9×13 inch baking dish.
  6. Bake for 20-25 minutes, or until heated through and the cheese is melted and bubbly.
  7. Let it stand for a few minutes before serving.

Notes

  • For an extra cheesy bake, add more cheddar cheese on top before baking.
  • Serve with a side salad or cornbread for a complete meal.
