- 1 pound ground beef
- 1 onion, chopped
- 1 can (15 ounces) sweet corn, drained
- 1 can (10 ounces) Rotel diced tomatoes with green chilies, undrained
- 1 package (1 ounce) dry ranch seasoning mix
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup milk
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Brown the ground beef and chopped onion in a large skillet over medium-high heat. Drain off any excess grease.
- Stir in the drained sweet corn, undrained Rotel, ranch seasoning mix, shredded cheddar cheese, sour cream, and milk.
- Season with salt and pepper to your preference.
- Pour the mixture into a greased 9×13 inch baking dish.
- Bake for 20-25 minutes, or until heated through and the cheese is melted and bubbly.
- Let it stand for a few minutes before serving.
Notes
- For an extra cheesy bake, add more cheddar cheese on top before baking.
- Serve with a side salad or cornbread for a complete meal.
