Ingredients

  • 1 large egg
  • 1 tablespoon crumbled feta cheese

  • 1 teaspoon olive oil
  • 1/4 cup baby spinach
  • Pinch of black pepper

Instructions

  1. Heat olive oil in a small skillet over medium heat.
  2. Crack the egg into the skillet and cook until set to your preference.
  3. While the egg cooks, lightly toast the bread slices.
  4. Place spinach on one slice of toast.
  5. Top the spinach with the cooked egg.
  6. Sprinkle the sun-dried tomatoes and feta cheese over the egg.
  7. Add black pepper to taste.
  8. Place the second slice of toast on top to complete the sandwich.
