Irresistible Mulberry Earl Grey Cheesecake Delight

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 3 large eggs
  • 2 Earl Grey tea bags
  • 1/2 cup boiling water
  • 1 cup fresh or frozen mulberries

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Wrap the outside of a 9-inch springform pan with heavy-duty aluminum foil.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes. Set aside to cool.
  3. Steep the Earl Grey tea bags in 1/2 cup of boiling water for 10 minutes. Remove the tea bags and let the tea cool completely. You should have about 1/3 cup of strong tea.
  4. In a large bowl, beat the cream cheese until smooth. Gradually beat in 1 cup of sugar and the flour until combined. Mix in the vanilla extract and sour cream.
  5. Beat in the eggs one at a time, mixing just until combined after each addition. Do not overmix.
  6. Pour half of the cream cheese mixture over the cooled crust. Gently stir the cooled Earl Grey tea into the remaining half of the cream cheese mixture. Pour this tea-flavored mixture over the first layer.
  7. Scatter the mulberries over the top of the cheesecake.
  8. Place the foil-wrapped springform pan into a larger roasting pan. Carefully pour hot water into the roasting pan until it reaches halfway up the sides of the springform pan (this is a water bath).
  9. Bake for 55 to 65 minutes, or until the edges are set but the center still jiggles slightly.
  10. Turn off the oven, prop the door open slightly, and let the cheesecake cool in the oven for 1 hour.
  11. Remove the cheesecake from the water bath and let it cool completely on a wire rack. Refrigerate for at least 6 hours, or preferably overnight, before serving.
