Description

  • 3 cups old-fashioned rolled oats
  • 1 cup powdered sugar (for filling)

  • 1 teaspoon vanilla extract (for filling)
  • 2 tablespoons milk (for filling)

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the 1 cup of butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in 1 teaspoon of vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Stir in the rolled oats.
  6. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10 to 12 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  8. To make the filling, beat the 1/2 cup of softened butter until smooth. Gradually add the powdered sugar, beating until combined.
  9. Mix in 1 teaspoon of vanilla extract and 2 tablespoons of milk until the filling is light and creamy.
  10. To assemble, spread a generous layer of filling on the flat side of one cooled cookie. Top with another cookie, flat side down, and gently press to form a sandwich.

  • For softer cookies, slightly underbake them.
