  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 large eggs
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1/2 cup chopped pecans or walnuts (optional)
  • 8 ounces cream cheese, softened
  • 1/4 cup (1/2 stick) unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, and salt. Set aside.
  3. In a large bowl, beat the granulated sugar and 1/2 cup softened butter until creamy. Beat in the eggs one at a time. Stir in the pumpkin puree.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the nuts, if using.
  5. Spread the batter evenly into the prepared pan.
  6. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Let the bars cool completely on a wire rack.
  7. To make the frosting, beat the softened cream cheese and 1/4 cup softened butter together until smooth.
  8. Gradually beat in the powdered sugar until combined. Stir in the vanilla extract.
  9. Spread the frosting evenly over the cooled pumpkin bars. Cut into squares before serving.
