A simple recipe for creamy Cajun pasta cooked in a single pot.

- 1 pound pasta (penne or rotini)
- 1 tablespoon olive oil
- 1 pound smoked sausage, sliced
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 3 cups chicken broth
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add sausage and cook until browned, about 5 minutes.
- Add onion and bell pepper to the pot and cook until softened, about 5 minutes.
- Stir in garlic and cook for 1 minute until fragrant.
- Add diced tomatoes, chicken broth, Cajun seasoning, oregano, and black pepper. Bring the mixture to a boil.
- Add the dry pasta to the boiling liquid. Reduce heat to medium-low, cover, and simmer for 12-15 minutes, stirring occasionally to prevent sticking, until the pasta is cooked through and most of the liquid is absorbed.
- Stir in the heavy cream and Parmesan cheese until the sauce is smooth and creamy.
- Add the fresh spinach and cook until wilted, about 2 minutes.
- Serve immediately.
Notes
- Adjust the amount of Cajun seasoning to control the spice level.
- You can substitute chicken broth with vegetable broth for a vegetarian option if you omit the sausage.
