- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup creamy peanut butter
- 1/2 cup milk
- 1/2 cup sour cream
- 1 cup powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- In another bowl, combine the peanut butter, 1/2 cup milk, and sour cream until smooth.
- Gradually add the dry ingredients to the wet ingredients, alternating with the peanut butter mixture, beginning and ending with the dry ingredients. Mix until just combined.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- While the cake cools, prepare the frosting. In a medium bowl, whisk together the powdered sugar, 2 tablespoons milk, and 1 teaspoon vanilla extract until smooth and creamy. Add more milk if needed to reach desired consistency.
- Once the cake is completely cool, spread the frosting evenly over the top.
Notes
- For an extra peanut butter flavor, you can add 1/2 cup of peanut butter chips to the batter.
- Ensure your peanut butter is at room temperature for easier mixing.
- You can substitute buttermilk for regular milk in the cake batter for added moisture.
