- 4 large eggs
- 1/2 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/4 cup ground pistachios
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/4 cup finely chopped pistachios for garnish
Instructions
- Preheat your oven to 375°F (190°C). Line a 10×15 inch jelly roll pan with parchment paper.
- In a large bowl, beat the eggs and granulated sugar with an electric mixer until pale and thick, about 5 minutes.
- In a separate bowl, whisk together the flour, ground pistachios, baking powder, and salt.
- Gently fold the dry ingredients into the egg mixture in three additions until just combined. Do not overmix.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 10 to 12 minutes, or until the cake springs back lightly when touched.
- While the cake bakes, place a clean kitchen towel on your counter and dust it lightly with powdered sugar.
- Immediately invert the hot cake onto the sugared towel. Peel off the parchment paper.
- Starting from a short end, carefully roll the cake and towel together. Let it cool completely in this rolled shape on a wire rack.
- For the filling, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Once the cake is cool, gently unroll it. Spread the whipped cream filling evenly over the cake surface, leaving a small border.
- Reroll the cake tightly, without the towel.
- Dust the top with extra powdered sugar and sprinkle with chopped pistachios before slicing and serving.
Notes
- You can substitute almond flour for a portion of the all-purpose flour for a richer nut flavor.
- Chill the filling ingredients before whipping for best results.
