Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar, plus more for dusting
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup finely ground pistachios
  • 1/4 cup shelled, chopped pistachios for topping

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and 1/4 cup powdered sugar until light and fluffy.
  3. Beat in the vanilla extract and almond extract.
  4. In a separate bowl, whisk together the flour, salt, and ground pistachios.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Roll the dough into 1-inch balls. Roll each ball in the remaining powdered sugar.
  7. Place the dough balls on the prepared baking sheets, about 2 inches apart. Gently press the top of each cookie with your thumb or the back of a spoon.
  8. Sprinkle a few pieces of chopped pistachio on top of each cookie.
  9. Bake for 10 to 12 minutes, or until the edges are set but the centers remain soft.
  10. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • You can substitute ground almonds for ground pistachios if needed.
  • Store cooled cookies in an airtight container at room temperature.
