Simple cookies made using red velvet cake mix.

- 1 box (15.25 ounces) red velvet cake mix
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup white chocolate chips
Instructions
- Preheat your oven to 350 degrees F. Line baking sheets with parchment paper.
- In a large bowl, combine the cake mix, vegetable oil, and eggs. Mix until just combined. Do not overmix.
- Stir in the white chocolate chips.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 9 to 11 minutes, or until the edges are set. The centers may look slightly underdone.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a thicker cookie, chill the dough for 30 minutes before scooping.
- You can substitute semi-sweet chocolate chips for white chocolate chips.
