Simple, sweet bites made with ricotta cheese, pistachios, and honey.

- 1 cup whole milk ricotta cheese, drained
- 1/2 cup finely ground pistachios
- 1/4 cup all-purpose flour
- 1 large egg
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- Pinch of salt
- Vegetable oil for frying
- 1/4 cup honey, for drizzling
- 2 tablespoons chopped pistachios, for garnish
Instructions
- In a medium bowl, combine the drained ricotta cheese, ground pistachios, flour, egg, sugar, vanilla extract, and salt. Mix until just combined into a soft dough.
- Heat about 1 inch of vegetable oil in a deep skillet over medium heat to 350°F (175°C).
- Using two small spoons or a small cookie scoop, carefully drop spoonfuls of the ricotta mixture into the hot oil. Do not overcrowd the pan.
- Fry for 2 to 3 minutes per side, turning gently, until golden brown.
- Remove the bites with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
- Arrange the warm bites on a serving plate. Drizzle generously with honey and sprinkle with chopped pistachios before serving.
Notes
- Drain the ricotta cheese well for at least 30 minutes to prevent the dough from being too wet.
- If you do not have a thermometer, test the oil by dropping a small piece of dough in; it should sizzle immediately but not brown too fast.
