Description

A simple salad featuring roasted cauliflower and a fresh green goddess dressing.


Ingredients

  • 1 head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup mixed greens
  • 1/2 cup fresh parsley, packed
  • 1/4 cup fresh basil leaves
  • 1/4 cup fresh chives
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons lemon juice
  • 1 clove garlic
  • 2 tablespoons water (or more for desired consistency)
  • 1/4 cup toasted slivered almonds (for topping)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Toss the cauliflower florets with olive oil, salt, and pepper on a baking sheet.
  3. Roast for 20 to 25 minutes, turning halfway, until tender and lightly browned. Set aside to cool slightly.
  4. While the cauliflower roasts, prepare the dressing. Combine parsley, basil, chives, Greek yogurt, lemon juice, garlic, and 2 tablespoons of water in a food processor or blender. Process until smooth. Add more water, one teaspoon at a time, until you reach your preferred dressing consistency.
  5. In a large bowl, combine the mixed greens and the cooled roasted cauliflower.
  6. Drizzle the green goddess dressing over the salad and toss gently to coat.
  7. Divide the salad onto plates and sprinkle with toasted slivered almonds before serving.

Notes

  • You can roast the cauliflower ahead of time and store it in the refrigerator for up to two days.
  • If you prefer a thinner dressing, use slightly more water or a splash of white wine vinegar.
