Description
A simple salad featuring roasted cauliflower and a fresh green goddess dressing.
Ingredients

- 1 head cauliflower, cut into florets
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup mixed greens
- 1/2 cup fresh parsley, packed
- 1/4 cup fresh basil leaves
- 1/4 cup fresh chives
- 1/4 cup plain Greek yogurt
- 2 tablespoons lemon juice
- 1 clove garlic
- 2 tablespoons water (or more for desired consistency)
- 1/4 cup toasted slivered almonds (for topping)
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Toss the cauliflower florets with olive oil, salt, and pepper on a baking sheet.
- Roast for 20 to 25 minutes, turning halfway, until tender and lightly browned. Set aside to cool slightly.
- While the cauliflower roasts, prepare the dressing. Combine parsley, basil, chives, Greek yogurt, lemon juice, garlic, and 2 tablespoons of water in a food processor or blender. Process until smooth. Add more water, one teaspoon at a time, until you reach your preferred dressing consistency.
- In a large bowl, combine the mixed greens and the cooled roasted cauliflower.
- Drizzle the green goddess dressing over the salad and toss gently to coat.
- Divide the salad onto plates and sprinkle with toasted slivered almonds before serving.
Notes
- You can roast the cauliflower ahead of time and store it in the refrigerator for up to two days.
- If you prefer a thinner dressing, use slightly more water or a splash of white wine vinegar.
