Description

A recipe for savory biscuits featuring sage and Gruyere cheese.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1 tablespoon fresh sage, finely chopped
  • 1 cup grated Gruyere cheese
  • 3/4 cup buttermilk

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Stir in the chopped sage and grated Gruyere cheese.
  5. Pour in the buttermilk and mix gently until just combined. Do not overmix.
  6. Turn the dough out onto a lightly floured surface. Gently pat or roll the dough to about 3/4 inch thickness.
  7. Use a biscuit cutter to cut out rounds. Place the rounds on the prepared baking sheet.
  8. Bake for 12 to 15 minutes, or until the tops are golden brown.

Notes

  • For flakier biscuits, ensure your butter is very cold.
  • You can brush the tops with melted butter before baking for extra richness.
