Ingredients

  • 1 cup bread crumbs
  • 1/4 cup mayonnaise
  • 1 egg, beaten
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil

Instructions

  1. In a medium bowl, combine the drained salmon, bread crumbs, mayonnaise, beaten egg, parsley, lemon juice, salt, and pepper. Mix well.
  2. Shape the mixture into 4 patties.
  3. Heat the vegetable oil in a large skillet over medium-high heat.
  4. Cook the salmon cakes for 3-4 minutes per side, until golden brown and heated through.
