Ingredients

  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1/4 cup all-purpose flour
  • 2 cups sliced Granny Smith apples
  • 1/2 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350 degrees F. Wrap the outside of a 9-inch springform pan with heavy-duty aluminum foil.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture firmly into the bottom of the prepared springform pan. Bake for 10 minutes. Set aside to cool slightly.
  3. Beat the softened cream cheese, 1 1/2 cups sugar, and vanilla extract in a large bowl until smooth. Beat in the eggs one at a time, mixing well after each addition. Mix in the flour until just combined. Pour the cheesecake batter over the cooled crust.
  4. In a separate bowl, toss the sliced apples with brown sugar, cinnamon, and nutmeg. Arrange the apple slices evenly over the cheesecake batter.
  5. Bake for 50 to 60 minutes, or until the center is almost set. Turn off the oven, crack the door open, and let the cheesecake cool inside the oven for 1 hour. Remove from the oven and cool completely on a wire rack. Chill in the refrigerator for at least 4 hours.
  6. To make the caramel, combine heavy cream, 1/2 cup sugar, and salt in a small saucepan over medium heat. Stir constantly until the sugar dissolves and the mixture turns a deep amber color, about 8 to 10 minutes. Remove from heat and let cool slightly.
  7. Once the cheesecake is chilled, drizzle the cooled salted caramel sauce over the top before serving.

Notes

  • For easier slicing, run a thin knife dipped in hot water around the edge of the cheesecake before releasing the springform side.
  • You can substitute store-bought caramel sauce if you prefer a quicker option.
