A simple recipe for making a breakfast sandwich similar to the popular fast-food version, featuring sausage, egg, and sweet griddle cakes.

- 2 small pancake or griddle cakes (maple flavored preferred)
- 2 large eggs
- 2 pre-cooked sausage patties
- 2 slices American cheese
- 1 tablespoon butter or cooking spray
Instructions
- Heat a non-stick skillet over medium heat. Add butter or cooking spray.
- Crack the eggs into the skillet. Cook until the whites are set and the yolks reach your desired doneness. You can cook them sunny-side up or flip them for over-easy/medium/hard.
- While the eggs cook, warm the sausage patties according to package directions, usually in a microwave or skillet.
- Warm the griddle cakes briefly in a microwave or toaster oven until soft.
- Place one slice of cheese on each sausage patty while they are warm so the cheese begins to melt.
- Assemble the sandwich: Place one griddle cake on a plate. Top with one cheesy sausage patty, one cooked egg, and the second cheesy sausage patty. Place the second griddle cake on top.
- Serve immediately.
Notes
- For a faster cook, use pre-cooked, microwavable eggs.
- You can substitute cheddar or Swiss cheese for American cheese.
- Use a round biscuit cutter to shape the eggs if you want a perfect circle.
