- 1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, whisk together the flour, baking powder, salt, black pepper, and garlic powder.
- In a separate bowl, beat the eggs and then whisk in the vegetable oil.
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the shredded zucchini and cheddar cheese.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

- Ensure you squeeze as much moisture as possible from the shredded zucchini for a better texture.
- You can add other shredded cheeses like Monterey Jack or a blend.
