Irresistible Shrimp and Grits

Description

A classic comfort food dish featuring tender shrimp and creamy grits.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 4 cups chicken broth
  • 1 cup stone-ground grits
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter
  • 1/2 cup chopped yellow onion
  • 1/4 cup chopped green bell pepper
  • 2 cloves garlic, minced
  • 1/4 cup dry white wine
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a medium saucepan, bring the chicken broth to a boil. Gradually whisk in the grits. Reduce heat to low, cover, and simmer for 20-25 minutes, or until tender, stirring occasionally.
  2. While the grits are cooking, melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
  3. Add the remaining 2 tablespoons of butter to the skillet. Add the onion and bell pepper and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more until fragrant.
  4. Pour in the white wine and scrape up any browned bits from the bottom of the skillet. Let it simmer for 1 minute.
  5. Stir in the heavy cream, parsley, and lemon juice. Bring to a simmer and cook for 2-3 minutes until slightly thickened.
  6. Return the shrimp to the skillet and stir to coat. Season with salt and pepper to taste.
  7. Stir the heavy cream and 2 tablespoons of butter into the cooked grits until smooth and creamy. Season with salt and pepper.
  8. Serve the shrimp mixture over the creamy grits.

Notes

  • For extra flavor, you can add a pinch of cayenne pepper to the shrimp mixture.
  • If you prefer a thicker consistency for your grits, use less broth or cook them for a longer period.
