A classic comfort food dish featuring tender shrimp and creamy grits.

- 1 pound large shrimp, peeled and deveined
- 4 cups chicken broth
- 1 cup stone-ground grits
- 1/2 cup heavy cream
- 4 tablespoons unsalted butter
- 1/2 cup chopped yellow onion
- 1/4 cup chopped green bell pepper
- 2 cloves garlic, minced
- 1/4 cup dry white wine
- 2 tablespoons chopped fresh parsley
- 1 tablespoon lemon juice
- Salt and freshly ground black pepper to taste
Instructions
- In a medium saucepan, bring the chicken broth to a boil. Gradually whisk in the grits. Reduce heat to low, cover, and simmer for 20-25 minutes, or until tender, stirring occasionally.
- While the grits are cooking, melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
- Add the remaining 2 tablespoons of butter to the skillet. Add the onion and bell pepper and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more until fragrant.
- Pour in the white wine and scrape up any browned bits from the bottom of the skillet. Let it simmer for 1 minute.
- Stir in the heavy cream, parsley, and lemon juice. Bring to a simmer and cook for 2-3 minutes until slightly thickened.
- Return the shrimp to the skillet and stir to coat. Season with salt and pepper to taste.
- Stir the heavy cream and 2 tablespoons of butter into the cooked grits until smooth and creamy. Season with salt and pepper.
- Serve the shrimp mixture over the creamy grits.
Notes
- For extra flavor, you can add a pinch of cayenne pepper to the shrimp mixture.
- If you prefer a thicker consistency for your grits, use less broth or cook them for a longer period.
