Slow Cooker Honey Garlic Chicken

Description

A simple recipe for tender chicken coated in a sweet and savory honey garlic sauce, cooked slowly in a slow cooker.


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 1/4 cup ketchup
  • 2 tablespoons apple cider vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water

Instructions

  1. Place the chicken in the bottom of your slow cooker.
  2. In a medium bowl, whisk together the soy sauce, honey, ketchup, apple cider vinegar, minced garlic, ginger, and black pepper.
  3. Pour the sauce mixture over the chicken in the slow cooker.
  4. Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the chicken is cooked through and easily shredded.
  5. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the sauce.
  6. In a small bowl, whisk together the cornstarch and cold water to create a slurry.
  7. Stir the slurry into the sauce in the slow cooker.
  8. Cook on high for 10 to 15 minutes, stirring occasionally, until the sauce thickens.
  9. Serve the chicken hot over rice or with vegetables.

Notes

  • For thicker sauce, cook uncovered on high for the last 30 minutes after adding the slurry.
  • You can substitute brown sugar for honey if you prefer a less sweet flavor.
