Description
A simple recipe for tender chicken coated in a sweet and savory honey garlic sauce, cooked slowly in a slow cooker.
Ingredients
Scale
- 2 lbs boneless, skinless chicken breasts or thighs
- 1/2 cup soy sauce
- 1/2 cup honey
- 1/4 cup ketchup
- 2 tablespoons apple cider vinegar
- 4 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/4 teaspoon black pepper
- 1 tablespoon cornstarch
- 2 tablespoons cold water
Instructions
- Place the chicken in the bottom of your slow cooker.
- In a medium bowl, whisk together the soy sauce, honey, ketchup, apple cider vinegar, minced garlic, ginger, and black pepper.
- Pour the sauce mixture over the chicken in the slow cooker.
- Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the chicken is cooked through and easily shredded.
- Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the sauce.
- In a small bowl, whisk together the cornstarch and cold water to create a slurry.
- Stir the slurry into the sauce in the slow cooker.
- Cook on high for 10 to 15 minutes, stirring occasionally, until the sauce thickens.
- Serve the chicken hot over rice or with vegetables.
Notes
- For thicker sauce, cook uncovered on high for the last 30 minutes after adding the slurry.
- You can substitute brown sugar for honey if you prefer a less sweet flavor.
