Description

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 packet taco seasoning
  • 1/2 cup water
  • 8 large flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1 (10 oz) can red enchilada sauce
  • 1/2 cup sour cream (for topping)

Instructions

  1. Brown the ground beef and onion in a skillet over medium heat. Drain any excess fat.
  2. Stir in the taco seasoning and water. Simmer for 5 minutes until the liquid reduces slightly.
  3. Warm the flour tortillas so they are pliable.
  4. Spoon a portion of the meat mixture down the center of each tortilla. Fold in the sides and then roll tightly to form a burrito.
  5. Place the rolled burritos seam-side down in a baking dish.
  6. Pour the enchilada sauce evenly over the burritos.
  7. Sprinkle the shredded cheese over the sauce.
  8. Bake at 375 degrees Fahrenheit for 15 minutes, or until the cheese is melted and bubbly.
  9. Serve immediately with a dollop of sour cream on top.

Notes

  • You can substitute ground turkey or shredded chicken for the ground beef.
