- 1 (9 inch) unbaked pie crust
- 1 (15 ounce) can pumpkin puree
- 1 (14 ounce) can sweetened condensed milk
- 2 large eggs, separated
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/4 cup granulated sugar (for meringue)
- 1/4 teaspoon cream of tartar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350 degrees F (175 degrees C).
- In a large bowl, mix the pumpkin puree, sweetened condensed milk, 2 egg yolks, cinnamon, ginger, cardamom, cloves, nutmeg, and salt until combined.
- Pour the pumpkin mixture into the unbaked pie crust.
- Bake for 45 to 50 minutes, or until a knife inserted near the center comes out clean. Let the pie cool completely on a wire rack.
- While the pie cools, prepare the meringue. In a clean, dry bowl, beat the 2 egg whites until soft peaks form.
- Gradually add the granulated sugar and cream of tartar, beating until stiff, glossy peaks form. Beat in the vanilla extract.
- Spread the meringue evenly over the cooled pumpkin filling, making sure the meringue touches the edges of the crust to prevent shrinking.
- Bake the pie for an additional 10 to 15 minutes, or until the meringue is lightly golden brown.
- Cool the pie completely before slicing and serving.
Notes
- For best meringue results, make sure your mixing bowl and whisk attachments are completely free of grease or water.
- You can toast the spices lightly before mixing them into the filling for a deeper flavor.
