Simple recipe for savory pastry pinwheels filled with spinach and feta cheese.

- 1 sheet frozen puff pastry, thawed
- 1 cup fresh spinach, chopped
- 4 ounces feta cheese, crumbled
- 1 large egg, beaten
- 1 tablespoon milk
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
- In a bowl, combine the chopped spinach and crumbled feta cheese.
- Unroll the thawed puff pastry sheet onto a lightly floured surface.
- Spread the spinach and feta mixture evenly over the entire surface of the pastry, leaving a small border on one long edge.
- Starting from the long edge opposite the border, tightly roll the pastry into a log.
- Brush the seam lightly with water to seal the roll.
- Using a sharp knife, cut the log into 12 equal slices, about 3/4 inch thick.
- Place the pinwheels cut-side up on the prepared baking sheet, leaving some space between them.
- In a small bowl, whisk together the egg and milk to create an egg wash.
- Brush the tops of the pinwheels with the egg wash.
- Bake for 15 to 18 minutes, or until the pastry is golden brown and puffed.
- Remove from the oven and let cool slightly before serving.
Notes
- You can add a pinch of black pepper to the filling for extra flavor.
- If the pastry is too sticky to handle, chill it in the refrigerator for 10 minutes before rolling and cutting.
