Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1 cup fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar (for topping)
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs and 1/4 cup sugar. Pour in melted butter and stir until combined. Press mixture into the bottom of a 9-inch springform pan.
  3. Bake the crust for 10 minutes. Remove from oven and let cool.
  4. In a large bowl, beat cream cheese and 1 cup sugar until smooth.
  5. Beat in eggs one at a time, mixing well after each addition.
  6. Stir in vanilla extract and sour cream until just combined.
  7. Pour filling over the cooled crust.
  8. Bake for 50-60 minutes, or until the center is almost set.
  9. While the cheesecake bakes, prepare the strawberry topping. In a small saucepan, combine sliced strawberries, 2 tablespoons sugar, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens and strawberries soften, about 5-7 minutes.
  10. Remove cheesecake from oven and let it cool in the pan on a wire rack for 10 minutes.
  11. Carefully run a knife around the edge of the pan to loosen the cheesecake.
  12. Pour the strawberry topping over the cheesecake.
  13. Refrigerate for at least 4 hours, or until firm.
