A rich cheesecake base set atop a soft sugar cookie crust.

- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup sour cream
- 1 teaspoon vanilla extract
- 2 large eggs
Instructions
- Preheat your oven to 350 degrees F. Grease a 9-inch springform pan.
- For the crust: Mix flour, softened butter, 1/2 cup sugar, 1 egg, 1 teaspoon vanilla, and salt until just combined. Press the dough evenly into the bottom of the prepared springform pan.
- Bake the crust for 10 minutes. Remove from the oven and set aside. Reduce oven temperature to 325 degrees F.
- For the filling: Beat the cream cheese until smooth. Add 1/2 cup sugar, sour cream, and 1 teaspoon vanilla. Mix until blended.
- Beat in the 2 eggs one at a time, mixing just until incorporated after each addition. Do not overmix.
- Pour the cheesecake filling over the partially baked crust.
- Bake at 325 degrees F for 45 to 55 minutes, or until the edges are set and the center has a slight jiggle.
- Turn off the oven and let the cheesecake cool inside the oven with the door ajar for 1 hour.
- Remove the cheesecake from the oven and cool completely on a wire rack. Chill in the refrigerator for at least 4 hours before serving.
Notes
- For a smoother crust, chill the dough for 30 minutes before pressing it into the pan.
- To prevent cracking, place a pan of water on the lower rack while baking the cheesecake.
