Description

A quick and flavorful dish featuring succulent shrimp and crisp asparagus tossed in a sweet chili sauce.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • Cooked rice, for serving

Instructions

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
  3. Add asparagus to the skillet and stir-fry for 3-4 minutes, until tender-crisp.
  4. Add minced garlic and cook for 30 seconds until fragrant.
  5. In a small bowl, whisk together sweet chili sauce, soy sauce, grated ginger, and red pepper flakes (if using).
  6. Return shrimp to the skillet with the asparagus. Pour the sauce over the shrimp and asparagus.
  7. Toss to coat everything evenly and cook for 1-2 minutes until the sauce has thickened slightly.
  8. Serve immediately over cooked rice.

Notes

  • For extra flavor, you can add a squeeze of lime juice before serving.
  • Adjust the red pepper flakes to your preferred level of heat.
