A quick recipe for chicken stir fry with a savory peanut sauce.

- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon vegetable oil
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1/2 cup shredded carrots
- 1/4 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1/4 cup water
- Cooked rice, for serving
- Chopped peanuts, for garnish
- Fresh cilantro, chopped, for garnish
Instructions
- Mix peanut butter, soy sauce, honey, rice vinegar, ginger, garlic, and water in a small bowl until smooth. This is your sauce.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
- Add bell pepper, broccoli, and carrots to the skillet. Stir fry for 3-5 minutes until vegetables are tender-crisp.
- Return the cooked chicken to the skillet.
- Pour the peanut sauce over the chicken and vegetables. Stir constantly until the sauce thickens slightly and coats everything, about 1-2 minutes.
- Serve immediately over cooked rice. Garnish with chopped peanuts and cilantro.
Notes
- You can substitute chicken with tofu or shrimp for a different protein.
- Adjust the amount of honey or rice vinegar to suit your taste preference for sweetness or tanginess.
