A simple recipe for sweet and crunchy toffee Chex mix.

- 1 cup (2 sticks) unsalted butter
- 1 cup packed light brown sugar
- 1/4 cup light corn syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 6 cups Chex cereal (rice, corn, or wheat)
- 1 cup mixed nuts (optional)
Instructions
- Preheat your oven to 250 degrees Fahrenheit. Line two large baking sheets with parchment paper.
- In a medium saucepan, combine the butter, brown sugar, and corn syrup. Cook over medium heat, stirring constantly, until the mixture boils. Boil for exactly one minute without stirring.
- Remove the saucepan from the heat. Stir in the vanilla extract and baking soda quickly. The mixture will foam up.
- Pour the hot toffee mixture over the cereal and nuts in a very large bowl. Gently stir until the cereal is evenly coated.
- Spread the coated cereal mixture onto the prepared baking sheets in a single layer.
- Bake for 30 minutes, stirring every 10 minutes to prevent burning.
- Remove from the oven and let the mix cool completely on the baking sheets before breaking it apart.
Notes
- You can use any combination of Chex cereal you prefer.
- For extra flavor, add 1 cup of small pretzel twists with the cereal.
