Ingredients

  • 1 cup rolled oats
  • 1 cup unsweetened coconut milk
  • 1/4 cup shredded unsweetened coconut
  • 2 tablespoons maple syrup
  • 1 tablespoon chia seeds
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease an 8×8 inch baking dish.
  2. In a medium bowl, combine the rolled oats, shredded coconut, chia seeds, turmeric, baking powder, and salt. Mix well.
  3. Pour in the coconut milk and maple syrup. Stir until all ingredients are just combined. Do not overmix.
  4. Pour the mixture into the prepared baking dish, spreading it evenly.
  5. Bake for 25 to 30 minutes, or until the top is set and lightly golden.
  6. Let it cool for 5 minutes before cutting and serving.
