Ingredients

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon peppermint extract
  • 1 cup heavy cream, whipped
  • ½ cup white chocolate chips, melted and cooled slightly
  • Crushed candy canes, for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs and granulated sugar. Pour in melted butter and stir until combined. Press mixture into the bottom and up the sides of a 9-inch pie plate.
  3. Bake for 8-10 minutes, or until lightly golden. Let cool completely.
  4. In a large bowl, beat cream cheese and powdered sugar until smooth.
  5. Beat in peppermint extract and melted white chocolate until well combined.
  6. Gently fold in the whipped cream until no streaks remain.
  7. Pour the mousse mixture into the cooled pie crust.
  8. Chill for at least 4 hours, or until firm.
  9. Garnish with crushed candy canes before serving.

Notes

  • For a firmer mousse, you can add 1 teaspoon of unflavored gelatin dissolved in 2 tablespoons of water to the cream cheese mixture before folding in the whipped cream.
  • Ensure your white chocolate is fully melted and slightly cooled to prevent it from seizing when added to the cream cheese mixture.
