Easy to make banana bars with a rich cream cheese frosting.

- 1 cup mashed ripe bananas (about 3 medium)
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- For the Frosting:
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the mashed bananas.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bars cool completely in the pan on a wire rack.
- While the bars are cooling, prepare the frosting. In a medium bowl, beat together the softened cream cheese and butter until smooth.
- Gradually add the powdered sugar, mixing until well combined and creamy. Stir in the vanilla extract.
- Once the bars are completely cool, spread the cream cheese frosting evenly over the top.
- Cut into bars and serve.

- Use very ripe bananas for the best flavor and moisture.
- Ensure the butter and cream cheese are at room temperature for smooth frosting.
