A fun and colorful dessert combining Italian flair with the charm of Lucky Charms cereal.
1 cup flour
1/2 cup sugar
1/4 cup butter, softened
1 egg
1/2 teaspoon vanilla extract
1/4 teaspoon baking powder
Pinch of salt
1/2 cup milk
1 cup Lucky Charms cereal marshmallows
Food coloring (optional)
Powdered sugar for dusting (optional)
Preheat oven to 350°F (175°C). Grease and flour a small baking pan.
In a bowl, cream together butter and sugar until light and fluffy.
Beat in egg and vanilla extract.
In a separate bowl, whisk together flour, baking powder, and salt.
Gradually add dry ingredients to wet ingredients, alternating with milk, starting and ending with dry ingredients. Mix until just combined.
If desired, add a few drops of food coloring and stir until evenly distributed.
Gently fold in Lucky Charms marshmallows.
Pour batter into the prepared baking pan.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Dust with powdered sugar before serving, if desired.
Notes
You can use any type of milk you prefer.
Adjust the amount of food coloring to achieve your desired color intensity.
Store leftovers in an airtight container at room temperature.
