Description

A hearty and flavorful soup featuring chicken, root vegetables, and traditional Caribbean spices.


Ingredients

  • 2 lbs chicken pieces, bone-in
  • 8 cups water
  • 1 large onion, chopped
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 2 potatoes, peeled and cubed
  • 1 yam or sweet potato, peeled and cubed
  • 1 scotch bonnet pepper, whole (optional)
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chopped fresh cilantro
  • 1 lime, juiced

Instructions

  1. Place chicken, water, onion, carrots, celery, potatoes, yam, thyme, salt, and pepper in a large pot.
  2. If using, add the whole scotch bonnet pepper to the pot. Do not break the pepper.
  3. Bring the mixture to a boil over high heat.
  4. Reduce heat to low, cover, and simmer for 45 minutes, or until the chicken is cooked through and tender.
  5. Remove the scotch bonnet pepper before serving.
  6. Stir in the fresh cilantro and lime juice.
  7. Serve hot.

Notes

  • For a thicker soup, mash some of the cooked potatoes against the side of the pot.
  • If you prefer less heat, use only half of the scotch bonnet pepper or remove the seeds before adding.
