Ingredients

  • 1 pound pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup capers, drained
  • 1/4 cup fresh lemon juice
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and cook until fragrant, about 1 minute.
  4. Stir in capers and lemon juice. Cook for another minute.
  5. Add the drained pasta to the skillet.
  6. Toss to coat the pasta with the lemon-caper sauce.
  7. Add a splash of reserved pasta water if needed to create a light sauce.
  8. Stir in Parmesan cheese and parsley.
  9. Season with salt and black pepper.
  10. Serve immediately.
