Ingredients

- 1 pound pasta
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 cup capers, drained
- 1/4 cup fresh lemon juice
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- Salt and black pepper to taste
Instructions
- Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
- While pasta cooks, heat olive oil in a large skillet over medium heat.
- Add minced garlic and cook until fragrant, about 1 minute.
- Stir in capers and lemon juice. Cook for another minute.
- Add the drained pasta to the skillet.
- Toss to coat the pasta with the lemon-caper sauce.
- Add a splash of reserved pasta water if needed to create a light sauce.
- Stir in Parmesan cheese and parsley.
- Season with salt and black pepper.
- Serve immediately.
Notes
- For a richer sauce, add a tablespoon of butter.
- Add cooked chicken or shrimp for a more substantial meal.
- Adjust lemon juice to your preference.
